Four-Ingredient Peanut Butter Cookies
This week has been “mommy camp” week, so I’ve been trying to do a couple of fun activities with them while I also try to get everything in order for back-to-school. I had promised them that we would do some cooking/baking activities and we decided to try these easy four-ingredient cookies.
They are chewy and delicious. If you’re in the gluten-free camp, these work for you too, since there is no flour to contend with. We got this recipe from this cookbook.
Four-Ingredient Peanut Butter Cookies
Ingredients
- 1/2 cup sugar
- 1 large egg
- 1/2 cup smooth peanut butter
- 1/4 cup M&Ms
Directions
- Adjust oven rack to middle position and heat oven to 350 degrees.
- Line a rimmed baking sheet with parchment paper.
- In a large bowl, whisk sugar and egg until smooth. Let the mixture sit until sugar dissolves, about 5 minutes.
- Add peanut butter to bowl and use rubber spatula to stir until smooth.
- Drop 12 scoops of dough onto baking sheet, leaving about 2 inches between scoops. Gently press M&Ms into tops of cookies.
- Place baking sheet in the over. Bake cookies until edges are golden and tops are set, 10-12 minutes.
- Remove baking sheet from oven. Place baking sheet on cooling rack and let cookies cool on baking sheet for 10 minutes.
- Transfer cookies to cooling rack and let cool for 5 minutes before serving.
