Four-Ingredient Peanut Butter Cookies

This week has been “mommy camp” week, so I’ve been trying to do a couple of fun activities with them while I also try to get everything in order for back-to-school. I had promised them that we would do some cooking/baking activities and we decided to try these easy four-ingredient cookies.

They are chewy and delicious. If you’re in the gluten-free camp, these work for you too, since there is no flour to contend with. We got this recipe from this cookbook.

Four-Ingredient Peanut Butter Cookies

Ingredients

  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup smooth peanut butter
  • 1/4 cup M&Ms

Directions

  1. Adjust oven rack to middle position and heat oven to 350 degrees.
  2. Line a rimmed baking sheet with parchment paper.
  3. In a large bowl, whisk sugar and egg until smooth. Let the mixture sit until sugar dissolves, about 5 minutes.
  4. Add peanut butter to bowl and use rubber spatula to stir until smooth.
  5. Drop 12 scoops of dough onto baking sheet, leaving about 2 inches between scoops. Gently press M&Ms into tops of cookies.
  6. Place baking sheet in the over. Bake cookies until edges are golden and tops are set, 10-12 minutes.
  7. Remove baking sheet from oven. Place baking sheet on cooling rack and let cookies cool on baking sheet for 10 minutes.
  8. Transfer cookies to cooling rack and let cool for 5 minutes before serving.
